Mulino Le Pietre continues its main commitment to promoting organic agriculture, with the aim of creating and encouraging the development of a short production chain that allows biodiversity to be safeguarded. The company processes the cereals and products obtained from crop rotation with organic methods coming particularly from the Tuscan Maremma and the Tuscan Coast with agricultural entrepreneurs who have a production ethic in relation to the environment and human work. As for the pasta, bronze drawing guarantees low-temperature extrusion processing not exceeding 32°C, thus preserving the organoleptic properties of the semolina used. Drying at low temperatures below 50°C in frames where they are spread manually and the long drying periods guarantee a product with a “gentle” flavor like that of the past. Highly digestible pasta containing low strength and rich gluten of a wide variability of proteins and vitamins including some secondary metabolites of great importance for the human organism such as polyphenols, carotenoids, tocopherols and fibres, to which important nutraceutical functions are attributed.
